Mouth watering coconut Thai Curry with added Hemp Gold Protein made by the infamous Chef Dell Valdez. A great meal to enjoy for dinner.
1 tbsp. Of curry paste (red,yellow, or green) jah rasta lol
1 C. Coconut milk
1 Scoop coconut hemp
1 tsp. Honey
3 pc. Shrimp or prawns
3oz. Filet of Mahi (any fish will do) cut up in small pieces
4-5 pcs. Of clams
4 pc. Wailua or pencil asparagus (cut on the bias)
1 pc. Small-med zucchini (cut in half then cut into half moons)
3 pc. Baby egg plant cut in half (Japanese eggplant will do also. Cut into half moon.)
1/4lb. Hari covert or long beans (cut on the bias).
In a med sauce pot or pan sauté curry paste for 1-2 minutes with olive oil on medium heat. Add the coconut hemp to the pan and incorporate into the paste. Continue to cook for 1 minute. (Be careful as to not burn the paste). Add the proteins (fish, shrimp, clams) and vegetables to the pan. Continue to cook for another minutes or two. Add the coconut milk and honey and bring to a boil. Once it comes to a boil adjust heat to a simmer and continue to cook till all the protein is cook thoroughly. About 5 minutes. Serve and enjoy.
